Crumpet’s Banana Caramel Crumpets
This recipe has made Crumpet’s Bakery famous throughout Acersville and the surrounding towns.
She’s been making these for ages! It’s a really good recipe and I hope you like it as much as the Loopies do!
What you’ll need:
2 Eggs
10 Rather Large Teaspoons Sugar
2 Tablespoons Butter / Margerine (melted)
2 Cups Milk
2 Cups Flour
2 Teaspoons Baking Powder
Pinch of Salt
1 tin Caramel (or you can make this by boiling a tin of condensedmilk for 4 hours before)
Perfectly ripe Bananas (Sliced)
Whipped Cream or Ice-cream
Caramel or Maple Syrup
Oil (for frying)
Non stick Cooking Spray
How to make it:
Beat the eggs and the sugar together. Add the melted butter and milk then mix.
Sift the flour and add it to the mixture, together with the baking powder and salt.
Whisk the mixture until there are no lumps.
Heat some oil in a pan and once the oil has heated, coat the pan with the hot oil by swirling the pan in a circular motion, now pour off the excess oil into a cup. (Keep this excess oil, as you’ll need to coat the pan in the same manner each time you add some more batter.)
Now spray the pan with the non-stick Cooking Spray.
Add spoonfuls of mixture and fry until bubbles appear, flip the crumpet and cook for a further few minutes.
Once crumpets are cooked, spread with butter and caramel, add the whipped cream and slices of banana. Now you’re all set to eat them!
Alternatively you can enjoy these delicious crumpets hot with butter and syrup or cool with butter, jam and cream!
